Earl Grey

"I'm not really a coffee person." She confessed. As she swirled her spoon around in her mug to dissolve the bit of sugar that sat in the bottom. I watched her closely. I respected her writings and her life's work. I wanted to learn how she thought and what made her tick. I was so grateful she agreed to meet with me and I wanted to see what she thought about some of my questions. I quickly ordered what she was having as well. 

The tea was floral, citrusy and elegant. I added a tiny bit of cream and sugar to mine. I breathed in the steam as if drinking in the scent. It had a striking balance of bright and sharp Mediterranean bergamot oil deeply grounding the scent of the dark tea leaves.  I looked at her and she smiled at me. I suppose I made it obvious it was my first experience with the tea. I laughed and suddenly felt like a kid in front of her.

I took a sip. It was bold and crisp with a slight brisk.  But the harsh edges were perfectly rounded. Subtle sweetness that does not overpower carried the flavor into a citrusy floral peaks at the top. The aftertaste lingered into a malty warth with a hint of citrus and summer flowers. I realized this taste will forever be wrap around this memory of high hopes and fulfilled dreams. As well as a beautiful start of a cherished friendship.

Earl grey is a timeless blend. We mix our Ceylon black tea with blue cornflowers and a touch of bergamot oil. While it is typically consumed alone, it can be combined with milk and sugar for a different experience.
